Apple Blackberry Hand Pies For The Win!

I wanted to make a pie post every week for the month of November, and this is the last pie post for the month of November and for the year of 2017.  I wanted to make an apple pie but I wanted to make it with a twist.  I went to the store and bought two granny smith apples and found blackberries on sale, so I decided to make apple blackberry pies. I actually really love making individual desserts because you don't have to worry about portioning out desserts for everyone. I couldn't find any of my large grain sugar so I used some gold sanding sugar that I had and I loved the way it added texture to the pies. There was also additional sweetness added that balanced out some of the tartness from the granny smith apples. They looked and tasted great and are really simple to make.

here's what you are going to need.

Pastry Crust

  • 2 Cups of flour
  • 1 Stick of salted butter (cut in small pieces)
  • 6 Tablespoons of ice cold water


Apple Blackberry Filling

  • 2 granny smith apples (peeled and diced)
  • 6 oz of blackberries
  • 1 cup of sugar
  • 4 oz of butter
  • 1/4 cup of honey
  • 1/4 cup of water


Topping

  • 1 egg (beaten)
  • sanding sugar




Freshly peeled apples

Dice your apples and place them in a pan with your blackberries and water


add your butter, sugar and honey



 cook on medium/high until filling starts to boil and gel


Remove from heat and let cool completely.

For Pie Crust

Take your 2 cups of flour and using two forks cut the butter into the flour until the mixture has a sandy texture.





Add your 6 tablespoons of your cold water and mix until your dough forms into a ball


Wrap your dough in plastic wrap and place in fridge for at least two hours



I cut this dough in half  and rolled out each half. I then used a 3 inch cookie cutter and cut out circles. (you may have to take the scraps from the circles and re roll them out.)


Make sure you have a top to each bottom.

I like to stack them to make sure I have enough tops

Place some of the filling in the center of each pie dough


Crimp the edges with a fork and then brush each top with the beaten egg. Add sugar crystals to the top of each hand pie.
not the neatest, they were a little overfilled but thats ok.

Bake on 400F for 20 minutes.  Once baked place on cooling rack to cool completely.
